It is something we can all possess, if we understand food and how food reacts to changes that take place as we do things to it. There are all processes that take place during cooking: variation, coagulation, denaturation, raising, browning reactions, gelatinisation, crystallisation, emulsification. When we understand we truly will be able to cook successfully.
