There are many ways of preserving food. What makes refrigeration unique is that it counteracts the causes of spoilage with little effect on the food itself. The main causes of spoilage are enzymes and microorganisms. And minus 18 degrees or colder for frozen foods, this is the temperature at which enzymes cease to function. Refrigeration doesn't eliminate microorganisms. So our role in keeping food safe doesn't end with putting it in the fridge. It's essential to minimize contamination of food.
